Cabernet Franc LEGACY is a fascinating wine. Its grapes are grown in a vineyard at a height of 350 meters on the slopes of the Ephraim Hills. This vineyard, with its unique micro-climate, has the clearest influence on the character of the wine. The wine is matured in barrels for 18 months and in the bottle for 10 more months until a complete synergy of aroma and flavors is achieved.

Cabernet Franc LEGACY is a wine intended to accompany a meal. It is a tempting red granite color, and characterized by a classic Cabernet Franc aroma. It has an attractive, pleasant hint of green typical of the variety, which is blended with the scent of subtly sweet fruit wrapped in a soft wood fragrance. The velvety body and its presence leave their mark long after drinking. Cabernet Franc grapes are carefully harvested mechanically and arrived at the winery in the early morning. Following a gentle crush the grapes were transferred into a chilled stainless steel tank for a day of cold soaking before the alcoholic fermentation. Upon completion of the cold soaking, the alcoholic fermentation process began at a temperature of 28°C while applying different pump-over regimes for the extraction of colors, flavors and aromas.
Following the alcoholic fermentation the wine was soaked on skins for three days. Upon completion of the extended maceration process, the grapes were slowly pressed, at low pressure into a stainless steel tank where malolactic fermentation takes place in order to stabilize and soften the wine.

Upon completion of the malolactic fermentation, the 18-months-long maturation process began in New French oak wooden barrels. The wine was then bottled and continued to mature for another 10 months before release to the market.
