The prevalent agave scent and taste is due to the use of bagasse in fermentation. At this higher alcohol content, Valles High Proof coats your mouth and has a complex, invigorating finish.

Aroma : Lots of cooked agave and grassy, floral notes. Light fruits and baking spices are also present. Taste : Strong agave flavor with black pepper and more grassy notes.

There are herbal and vegetal notes - celery, freshly cut grass, dry straw. And that lovely funk. Cinnamon, nutmeg and star anise mingle in.
