Estate: Passionate about winemaking, Prosper Maufoux founded the Burgundian estate in 1860. Located in the village of Santenay, in the heart of the southern Côte d’Or, the estate has a long history of crafting high quality, terroir driven wines. Today the company is headed by Eric Piffaut, whose family’s winemaking roots in Burgundy go back to 1898. Winemaker Nadine Gublin is at the helm, receiving many accolades, including being named the first female “Winemaker of the Year” by France’s leading wine magazine, La Revue du Vin de France.
Winemaking: Grapes are from vines 25 years in age in clay and limestone soils. Slow pressing on pneumatic presses, only the first presses of the highest quality batches are selected for the final blend. Malolactic fermentation in stainless steel tanks, second fermentation in the bottle, aged on its lees for 12-15 months.
Tasting Notes: Light gold in colour with aromas of green apple, pear, citrus, honeysuckle and hay. Yellow apple, pear, lemon, and a swirl of honey glide over fine, consistent bubbles and fresh acidity. Ginger, citrus zest and hint of brioche linger between each fizzy sip. Cheerful and fun on its own, or a great match with light dishes.
