Lyon Rum Dark

Despite the dark rum name, its coloring is a pleasing dark amber. The nose gives hints of molasses and raisin. Sipping it yields brown butter and sweet burnt caramel – just slightly bitter but not unpleasant. There’s no noticeable agricole notes despite half the mash being evaporated cane juice. There’s also no initial burn despite being 90 proof.

The mouthfeel is slightly more viscous than the average rum. Then finish fades quickly, then sneaks back in with a subtle reprise of caramel. A solid, albeit not inexpensive choice for cocktails calling for dark rum.
