Winemaking Hand-picked at the peak of flavor development, the grapes are crushed and cold-soaked for 24 hours. During fermentation, the cap is punched down in the early and later stages and pumped-over during its peak. These strategies help us maximize flavor extraction during fermentation and maceration, which lasts 10 to 15 days. The wine is aged in 40% new oak, a blend of 80% French and 20% American, and for 16 to 18 months. Vintage Notes Winter rains leading up to the growing season gave the vines a much-needed boost following the years of drought that have come before. Vines were given an opportunity to thrive. Optimal weather conditions helped promote healthy development in berry growth and maturity. These conditions helped to produce Cabernets of great color, aroma and flavor for the 2016 vintage. Tasting Notes Rich aromas of sun-ripened plum, black cherry and blackberry flow from the glass. The palate shows off concentrated berry compote, red licorice, vanilla, and sweet baking spice.
