Pepperiness that was present in Blanco seems overshadowed by sweetness, though there is a touch a pepper. We favor craftsmanship over mass production—to extract more rich, intense flavors, we cook our piñas for 18 to 20 hours (versus the industry average of 12) and our distilling process lasts 5½ hours (versus the industry average of 3½).
